Since the creation of Fez, the inhabitants made the calibration of a diversified culture in every area (architecture, science, handcraft, or gastronomy). Its privileged geographical location allowed it to mix cultures (Berbers, Jews, Christians, Muslims). So Fez absorbed different influences. It appropriated the Tafilalet cooking, from Andalusia, Middle Atlas, and Rif. This patchwork of flavors, said “a la fassie”, became the national cooking. To commemorate this heritage, the city of Fez organizes each year the Art of cooking festival.
