Formerly renowned for its sardines, the waters surrounding Essaouira abound in various fishes that it is possible to sample in the small restaurants of the bay. The harbor city drained a very heterogeneous population and freed itself from its culinary tradition. Because of an increasing tourism, the city provided itself with numerous restaurants, from seaside straw huts to the luxurious restaurants of the medina.
